Selected salt marsh and dune herbs give our Sylter Brandung Aquavit a maritime flair. Star anise and caraway give it the typical character of the North.

Distilled on our island – it doesn’t get more Sylt than this.

The maritime heart of the North

In small batches and with artisanal skill, our aquavit is infused with many salt marsh and dune herbs. Delicate botanicals such as flower petals are distilled in the downstream aroma basket in the alcohol vapour, while robust ingredients such as samphire are processed directly in the still.

The spiral in the distillation column filters out unwanted fusel alcohol in particular, making our aquavit very smooth and intensely present on the palate.

Unlike many industrially produced aquavits, many different herbs are used to develop a greater diversity of aromas. The use of our soft Sylt water rounds off the composition.

History

It all started with a boozy idea at the Hamburg Business Club. And who doesn’t know it: a great idea – everyone’s excited, but it never quite gets implemented. In this case, the passion for Sylt and spirits was so great that the first gin was created in 2014 and the first whisky casks moved into the warehouse at Rantum Harbour.

Under the name “Sylter Trading” we opened our office, and since 2017 we have been bottling our whisky regularly. But the dream was far from over. Our products are stored on Sylt, we use ingredients from our island, but production was still largely on the mainland. Our goal was and is: if it says Sylt on it, there should be Sylt in the bottle!

In November 2021 we installed our own distillery – not a standard system – but with many technical details to produce particularly intense distillates. And after many recipe adjustments, in May 2022 the time finally came: our own aquavit – Sylter Brandung – was bottled for the first time.

Made by the Sea is not just lip service.

Our Sylter Brandung Aquavit is made from the classic ingredients that make a good aquavit. This base is refined with a combination of salt marsh herbs and selected herbs from the dune landscapes, giving our aquavit its unmistakable Sylt character.

Our highly specialised distilling system, with the repeated use of aroma baskets, makes it possible to extract even the finest flavour notes from blossoms – and that’s why our Sylter Brandung is significantly more flavour-intense. Alongside the bold, typical aquavit notes, the sweet floral ingredients and the salty, citrus-like salt marsh herbs of the island make themselves known. For everyone, their own Brandung … gentle or stormy.

Sylt distillery

Our Sylter Brandung Aquavit is a distilled aquavit, which means that all flavour compounds are transferred through a distillation process, unlike aquavit infusions where herbs are transferred by maceration.

Our distillation process has several special features we are very proud of – and that aquavit connoisseurs appreciate.

4 cl Sylter Brandung Aquavit
3 – 4 basil leaves
Ginger Ale
Two cucumber slices for garnish

Preparation:
Fill a long drink glass halfway with ice. Now pour in 4 cl Sylter Brandung Aquavit and ginger ale. Garnish the long drink with a sprig of basil and two cucumber slices.
