Our Distillery

1. Pot Still
Our system features a copper pot still with a whisky head. The longer contact with copper itself and the longer neck distill the alcohol significantly more intensively.
2. Column with Spiral
The column of a still is typically equipped with multiple plates that refine the distillation process. We have deliberately chosen a different technology, and so our column is equipped with a spiral. The alcohol takes significantly longer to pass through the spiral, is stepless, and the contact with copper is significantly longer.
3. Downstream Botanical Basket
Typically, all ingredients are processed in a botanical basket within the pot itself. This leads to very delicate, fresh herbs quickly overcooking and releasing few of their aromas or even releasing bitter compounds.
We have installed an additional botanical basket unit after the column. Here, the alcohol vapor passes through the herbs without overcooking or burning them. Through this gentle method of aroma extraction, only the delicate aromas are filtered out.
We operate the entire distillation process very slowly so that we only filter out the desired aromas. Our system is larger than many other systems, allowing us to take more time while still achieving the desired quantities.
